Why can't I just buy one olive oil and use it for everything? Wouldn't that be easier than trying to pick them like wines?

Your question has the answer within it! Premium olive oils are a lot like wine in their differences and nuances. Just like wine, one could go middle of the road and purchase a "one size fits all" oil. However, don't short change your taste buds and your guests with one dimensional flavors. Many great olive oils are produced in a variety of countries to include Spain, Greece, Morocco, and even Tunisia. Italy seems to have a slight edge in the market because of the dedication of the growers and the government's desire to adhere to standards. Try our premium oil and use it beside a general purpose oil. Just as we are discussing wine, you will taste the difference immediately and have your answer. A side note is that there is no real advantage to buying premium estate oil if all you are going to do is sauté garlic and incorporate it into a Bolognese sauce. The subtle flavor will be lost in the sauce so better to use a good quality extra virgin oil for that and save the premium oil for seasoning with our sea salt blend and dipping your bread into!
