Come on, $50 to $100 for a knife? I have used a knife my
mother gave me 20 years ago and it still cuts pretty good.
Why spend that kind of money?
Any well made tool whether
you are cooking, doing carpentry, drafting, or surgery gives
the person doing those jobs a better chance of doing the
job well. Your knife from your mother has served you well
as you say but once anyone gets a well made knife and feels
the difference, the smiles come easy! Everyone has heard
the saying, "Dull knives are more dangerous" and
it really is true. Dull knives do not produce predictable
results and force the cook to work awkward and not with
the smooth precision possible with a forged quality knife
